That looks like a nice cake there in the photo, doesn’t it? Well, believe it or not, that is my great grandmother’s old-fashioned drop doughnuts. Well, it was supposed to be, but I had to adapt on the fly.

neither Eric nor I have any experience with deep frying donuts, so we had no idea what we were doing when I pulled this recipe out and tried it. We have some knowledge of using oil, so we did our best. Unfortunately, the drop doughnuts kept burning on the outside while remaining raw in the center. We tried changing the temperature of the oil, but it kept failing.

We knew we couldn’t keep messing with the oil, and the batter would get tough if we left it there while we tried to research how to properly fry donuts. I didn’t want to waste a whole bowl full of batter, so I decided that I was just going to see if I could turn it into cake. I poured the batter in a pan and topped it with the cinnamon sugar I’d already made, and there you have it. It’s actually a really delicious cake.

Some people would have had a breakdown in that situation. Many would have been stressed out and many would have thrown out the batter and called it all a failure. I don’t like being defeated, so I adapted. When faced with a challenge or failure, I usually try to find a different method or a way to recover. Adaptability keeps me moving forward instead of wallowing in defeat.

Being able to adapt is important in every part of life, not just when cooking. You need to be able to take a breath, look at where you are and what you’ve got, and then find a new way to keep going. Don’t let the starting idea hold you back. For this, I made a doughnut into a cake, I didn’t keep trying to make a doughnut. Keeping your mind open to all the possibilities can help you salvage all sorts of things and situations.
