Green Bean Casserole and Healthy Home Cooking

We’re planning on having green bean casserole tonight for dinner. I had it for the first time late last year, and I’m hooked. Now I get what all the fuss was about! It’s creamy, delicious goodness!

When we started eating healthier by making more things from scratch and using fresh ingredients, we naturally substituted the sodium-laden canned beans for bright, crisp fresh beans. It made a HUGE difference in the taste. I thought it was good to begin with, but it was suddenly even better. Of course, this is a pretty rich dish, so we only have it every couple of months.

We’re going to have it tonight, and I’m starting to wonder about using that can of cream of chicken soup that we bought and put in the cabinet. We got it not because we really wanted a canned food, but because it never dawned on either of us that there was another option. Well, I’ve been sitting here mentally drooling over the pending goodies and it hit me. Canned soup is nasty. It’s not healthy, especially this cream stuff.

So off I went to search the internet to see if one could make cream of chicken soup at home without hours of fuss. It turns out, you can! Oh my goodness, it’s so easy! We actually have everything we need to make it. Flour, butter, broth and spices. That’s all you need. We’ve got all that! So I emailed the recipes over to Eric and I’m going to see if maybe we can try it out. It would be awfully nice to have dinner be even healthier and more nutritious, and he’s pretty much the master of sauces, so it shouldn’t be hard to do.

If we do try to make our own cream soup, I’m not sure what we’ll do with the can. Maybe I can keep it for the next canned food drive, although I honestly feel bad giving unhealthy food to the needy. If you’re hungry though, you take what you can get. I do wish these drives would take fresh and healthy foods, but that’s another post entirely.

If we do our own soup, I’ll be sure to let everyone know how it turns out. (And now I’m chuckling inside as I wonder what will happen first: Will Eric see the recipes in his email, or read this and then go check his mail. [grins])
